Spicy Balochi Biryani:
Ingredients for Spice:
Chicken 600 gm
Onion 1
Ginger garlic paste 1 tbsp
Tomatoes 2
Yogurt ½ cup
White cumin powder 1 tsp
Salt, chili, turmeric as required
Mix whole spice 1 tbsp
Black salt ¾ tsp
Clarified butter ¾ cup
Ingredients for Rice
Rice ½ kg
Salt 2 tbsp
Yellow food color ¼ tsp
Yogurt ½ cup
Oil 4 tbsp
Ingredients for layer:
Mint, coriander as required
Green chilies, lemon sliced as required
Tomatoes, ginger chopped as required
Method:
Heat clarified butter fry onion. Also add whole spice cook well. Add ginger garlic paste, salt, chilies, turmeric, white pepper and tomatoes cook. Add yogurt mix well. Add water cook till chicken is done. Add black salt, green coriander, mint and green chilies mix well. Boiled rice with salt. Layer rice in pan. pour chicken mixture. Add dissolved yellow food color in yogurt. Add coriander, mint, green chilies, ginger, tomatoes and lemon sliced mix well. Layer remaining rice, pour oil and simmer.
Grilled Chicken Masala:
Ingredients for marniation:
Boneless chicken 400 gm
Yogurt 4 tbsp
Ginger garlic paste 1 tbsp
White cumin powder 1 tsp
All spice powder ½ tsp
Salt, red chili powder as required
Oil 2 tbsp
Ingredients for Spice:
Oil ½ cup
Chopped onion 1
Chopped tomatoes 2-3
Ginger garlic paste 1 tbsp
Salt, chilies, turmeric, coriander as required
Fenugreek ½ tsp
Cream 2 tbsp
Green coriander, green chilies for garnish
Method:
Marinate chicken for whole night. Grill chicken on next day. Heat oil add chopped onion fry well. Add chopped tomatoes, ginger garlic paste, salt, red chilies and coriander cook well. Add grilled chicken. Add cream and fenugreek simmer for 5 minute. Garnish with green coriander and green chilies, serve.
