Schezuan Chicken Liver:
Ingredients:
Chicken liver ½ kg
Mushroom 1 cup
Onion 1
Flour ½ cup
Spring onion 1
Salt to taste
Oil for frying
Crushed garlic 1 tbsp
Soy sauce 4 tbsp
Chili sauce ½ cup
Vinegar 2 tbsp
Corn flour 1 tbsp
Chicken stock 1 cup
Worcestershire sauce 2 tbsp
Chili flakes 1 tsp
Method
Put flour, salt and 1 tbsp chili sauce on chicken liver and leave for some time. Now shallow fry it in hot oil and remove. Heat 2 tbsp oil and fry crushed garlic in it. Alongside this add soy sauce, chili sauce, vinegar, Worcestershire sauce and chicken stock and cook till boil comes. Now dissolve corn flour in water add to make sauce thick. Heat 2 tbsp oil in a pan add mushroom and onion in sauce and mix well. Add chili flakes and garnish with spring onion.
Pineapple Fried Rice:
Ingredients:
Boiled rice 2 cup
Spring onion ½ cup
Crushed garlic 1 tbsp
Cashew nut 8-10
Chicken stock 1 cup
Pineapple 1 cup
Crushed black pepper 1 tsp
Chili sauce 1 tbsp
Soy sauce 1 tbsp
Vinegar 1 tbsp
Oil 4 tbsp
Sesame seed oil 1 tsp
Capsicum 1
Method
Heat oil a pan add crushed garlic in it when it gets lightly fry then add chili sauce, soy sauce, vinegar and chicken stock and cook until boil comes. Then mix crushed black pepper and boiled rice in it and fry. Also add pineapple, capsicum and spring onion. Now add sesame seed oil and mix then garnish with cashew nut.
Fried Prawn Balls :
Ingredients:
Prawns (finely cut) 250 gram
Fine chicken mince 200 gram
Chili sauce 1 tbsp
Corn flour 2 tbsp
Flour 2 tbsp
Crushed garlic 1 tsp
Crushed black pepper ¾ tsp
Egg 1
Salt to taste
Oil for frying
Yellow food color 1 pinch
Method
Mix chicken mince, finely cut prawns, chili sauce, black pepper, egg, flour, corn flour, yellow food color, salt and crushed garlic. Now make balls of it and fry them in oil. Serve with chili garlic sauce.
