Vegan Christmas pudding brownies

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup ground almonds
  • 1 ½ cups mixed dried fruit (raisins, sultanas, currants)
  • ½ cup maple syrup or agave syrup
  • ½ cup coconut oil (melted)
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • ½ cup orange juice
  • 1/4 cup plant-based milk
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the oven to 180°C (350°F) and grease a baking pan (8×8 inches).
  2. In a bowl, mix the flour, ground almonds, cocoa powder, baking powder, cinnamon, ginger, and salt.
  3. In a separate bowl, combine the maple syrup, melted coconut oil, orange juice, plant-based milk, and vanilla extract. Stir until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the dried fruit.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the brownies to cool completely in the pan before slicing into squares.

Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl. Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl. When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don’t overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
