Ingredients

  • 1/4 cup butter
  • 1/2 cup flour
  • 2 large eggs

  3. Add eggs, one at a time, beating well after each addition until dough is glossy.
  4. Pipe 4-inch strips onto the baking sheet and bake for 20-25 minutes until golden and puffed.
  5. Whip heavy cream until stiff peaks form, then fold in salted caramel sauce.
  6. Once eclairs are cool, cut them in half, fill with caramel cream, and top with caramel-coated popcorn.
  7. Dust with icing sugar and serve.
