Recipe Description

A classic British treat, these Rhubarb & Custard Sandwich Biscuits are a nostalgic delight. The tangy rhubarb filling is perfectly complemented by the sweet custard.

Ingredients

For the Biscuits:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Filling:

  • 1/2 cup rhubarb jam
  • 1/2 cup custard

Instructions

  1. Preheat oven to 190°C (375°F).
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Roll out the dough on a lightly floured surface to a thickness of about 1/4 inch.
  7. Cut out circles of dough using a cookie cutter.
  8. Place half of the circles on a baking sheet lined with parchment paper.
  9. Top each circle with a teaspoon of rhubarb jam and a teaspoon of custard.
  10. Top with the remaining circles of dough, pressing the edges to seal.
  11. Bake for 10-12 minutes, or until golden brown.
  12. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Tips

  • For a stronger rhubarb flavor, add some fresh rhubarb to the jam.
  • You can use store-bought or homemade custard.
  • To decorate the biscuits, you can dust them with powdered sugar or drizzle them with melted chocolate.

Homemade burgers with sweet potato wedges

Heat the oil in a frying pan and fry the onion for about 5 mins or until soft. Leave to cool slightly. When cool, put the onion in a large bowl with the mince, egg, bashed crackers, chilli, garlic, ketchup and brown sauce, and mix well to combine. Divide the mince into 6, roll into balls and flatten each into a nice fat burger. Put the flour on a plate, dab each burger to the flour on both sides, then transfer to a baking tray. Wrap with cling film and pop in the fridge for a couple of hours. Heat oven to 200C/180C fan/gas 6. To make the wedges, put the sweet potato on a baking tray and drizzle with olive oil. Sprinkle with paprika, season, then give them a good shake or shuffle around with your hands to make sure they’re well coated. Roast for 30-40 mins depending on how crisp you like them. Make sure you give them a good shake a couple of times to ensure they cook evenly. When the wedges have been cooking for 10 mins, drizzle the burgers with a little olive oil and put them in the oven to cook with the wedges for the remaining 20-30 mins, flipping them halfway. 5 Serve the burgers in the rolls with your choice of toppings, and a good helping of wedges on the side.
