Recipe Description

These adorable little carrot cakes are perfect for a tea party or a special occasion. The sweet carrot cake is paired with a tangy orange and honey syrup for a delightful flavor combination.

Ingredients

For the Cakes:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup grated carrots
  • 1/4 cup chopped walnuts (optional)
  • 1 teaspoon vanilla extract

For the Orange & Honey Syrup:

  • 1/2 cup orange juice
  • 1/4 cup honey
  • Zest of 1 orange

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a muffin tin with paper liners.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream together the butter and sugar until light and fluffy.
  5. Beat in the egg, then stir in the vanilla extract.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the grated carrots and walnuts.
  7. Divide the batter evenly among the muffin tin cups.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Make the Orange & Honey Syrup:

  1. In a small saucepan, combine the orange juice, honey, and orange zest.
  2. Bring to a simmer over medium heat, then reduce heat and simmer for 5 minutes, or until slightly thickened.
  3. Let cool completely.

Assemble the Cakes:

  1. Drizzle the cooled cakes with the orange and honey syrup.
  2. Serve immediately or store in an airtight container at room temperature.

  • You can add other spices to the batter, such as cinnamon or nutmeg.
