Fruity Simnel Squares are a delicious twist on the traditional simnel cake. Packed with dried fruits, marzipan, and a hint of spice, these squares are a perfect Easter treat. The marzipan is layered throughout, giving each bite a delightful sweetness. Easy to make and perfect for sharing!

Ingredients

  • For the Squares:
    • 200g dried mixed fruit (raisins, sultanas, currants)
    • 100g unsalted butter, softened
    • 100g caster sugar
    • 2 large eggs
    • 200g self-raising flour
    • 1 tsp ground mixed spice
    • 1 tsp ground cinnamon
    • 1 tbsp milk
    • 200g marzipan, rolled into a thin sheet
    • 1 tbsp golden syrup or honey
  • For the Glaze (optional):
    • 1 tbsp apricot jam
    • 1 tbsp water

Instructions

  1. Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a square 8-inch (20cm) baking tin with parchment paper.
  2. In a bowl, cream together the softened butter and caster sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. If the mixture starts to curdle, add a spoonful of flour to bring it back together.
  4. Fold in the self-raising flour, ground mixed spice, and ground cinnamon until fully incorporated.
  5. Stir in the dried mixed fruit and milk, then gently mix until the batter is smooth.
  6. Pour half of the batter into the prepared tin and spread it out evenly. Lay a sheet of marzipan over the batter, pressing it down gently.
  7. Top the marzipan with the remaining batter, smoothing it out to cover the marzipan completely.
  8. Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean. If the top is getting too brown, cover the tin with foil towards the end of baking.
  9. Allow the squares to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  10. If using the glaze, melt the apricot jam and water in a small saucepan over low heat until smooth. Brush the glaze over the top of the cooled simnel squares for a shiny finish.
  11. Once the glaze has set, cut the simnel cake into squares and serve!

Heat the grill to high. Arrange the bacon on a baking tray lined with foil. Cook for 5-7 mins until crisp, then turn off the grill but leave the tray inside to keep warm.

Mix the self-raising flour, baking powder, golden caster sugar and a pinch of salt together in a large bowl. Create a well in the centre with the back of a spoon, then add the eggs, 25g melted butter and  milk.

Whisk together either with a balloon whisk or electric hand whisk until smooth, then pour into a jug.

Heat a small knob of butter and 1 tsp of oil in a large, non-stick frying pan over a medium heat. When the butter looks frothy, pour in rounds of the batter, approximately 8cm wide. Make sure you don’t put the pancakes too close together as they will spread during cooking. Cook the pancakes on one side for about 1-2 mins or until lots of tiny bubbles start to appear on the surface, and the surface starts to look a bit set and drying out. Wait for the bubbles and surface to look right rather than relying on the timing, but if the pancake seems to be taking too long, check the underside to make sure it’s not burning or if it’s not cooking fast enough, adjust the heat. Flip the pancakes over and cook for a further minute, then transfer to the oven with the bacon to keep warm. Repeat until all the batter is used up.

Arrange the toppings you have chosen on a board and set the table, then add the pancakes and bacon just before serving. You can put extra toppings in bowls or replenish the board as you need to.
