- Total Time: 45 minutes
Ingredients
- For the Squares:
- 200g dried mixed fruit (raisins, sultanas, currants)
- 100g unsalted butter, softened
- 100g caster sugar
- 2 large eggs
- 200g self-raising flour
- 1 tsp ground mixed spice
- 1 tsp ground cinnamon
- 1 tbsp milk
- 200g marzipan, rolled into a thin sheet
- 1 tbsp golden syrup or honey
- For the Glaze (optional):
- 1 tbsp apricot jam
- 1 tbsp water
Instructions
- Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a square 8-inch (20cm) baking tin with parchment paper.
- In a bowl, cream together the softened butter and caster sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. If the mixture starts to curdle, add a spoonful of flour to bring it back together.
- Fold in the self-raising flour, ground mixed spice, and ground cinnamon until fully incorporated.
- Stir in the dried mixed fruit and milk, then gently mix until the batter is smooth.
- Pour half of the batter into the prepared tin and spread it out evenly. Lay a sheet of marzipan over the batter, pressing it down gently.
- Top the marzipan with the remaining batter, smoothing it out to cover the marzipan completely.
- Bake in the preheated oven for 25-30 minutes, or until a skewer inserted into the center comes out clean. If the top is getting too brown, cover the tin with foil towards the end of baking.
- Allow the squares to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
- If using the glaze, melt the apricot jam and water in a small saucepan over low heat until smooth. Brush the glaze over the top of the cooled simnel squares for a shiny finish.
- Once the glaze has set, cut the simnel cake into squares and serve!
