  • 1 cup semolina (suji)
  • 2 cups water
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon red chili flakes
  • 2 green chilies (finely chopped)
  • 2 tablespoons coriander leaves (chopped)
  • Oil for frying

Instructions

  1. Roast Semolina: In a pan, dry roast semolina over medium heat until it turns slightly golden. Set aside.
  2. Prepare Mixture: Heat 2 tablespoons oil in a pan. Add cumin seeds and mustard seeds. When they splutter, add green chilies, salt, and red chili flakes.
  3. Add Water: Pour 2 cups of water into the pan and bring to a boil.
  4. Mix Semolina: Gradually add the roasted semolina, stirring continuously to avoid lumps. Cook until the mixture thickens.
  5. Cool and Shape: Remove from heat and let it cool slightly. Shape the mixture into small balls.
  6. Fry Balls: Heat oil in a pan. Fry the semolina balls until golden brown and crispy. Drain on a paper towel.
  7. Serve: Serve hot with chutney or sauce of your choice.

Rinse the sushi rice really well and put in a small saucepan covered with 200ml cold water. Bring to the boil, then simmer for 10 mins with the lid on. Remove from the heat and keep the lid on for 15 mins before transferring to a serving bowl.
