Ingredients

  • For the Brownies:

    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 1/2 cup unsweetened cocoa powder

    • 1/4 teaspoon baking powder
    • 1 cup mini chocolate Easter eggs, chopped (or whole)
  • For the Drizzle:
    • 1/4 cup white chocolate chips
    • 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan or line with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until smooth.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. Sift together the flour, cocoa powder, salt, and baking powder in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture and mix until combined.
  6. Fold in the chopped Easter eggs, ensuring they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  9. Allow the brownies to cool completely in the pan before removing and cutting into squares.
  10. For the drizzle: melt the white chocolate chips with heavy cream in a microwave-safe bowl in 20-second intervals, stirring until smooth.
  11. Drizzle the melted white chocolate over the cooled brownies and let it set before serving.

Put the popcorn, bread or breadcrumbs and paprika in a food processor and blend until finely chopped. Tip into a wide, shallow bowl. Whisk the egg in a second bowl, and mix the flour with some seasoning in a third bowl. Dip the chicken strips first into the seasoned flour, then into the egg mixture, and finally into the popcorn breadcrumbs – press the crumbs onto the chicken to help them stick. Continue until all the chicken pieces are coated, then chill for 30 mins, or up to 1 day. Mix together the ingredients for the dip in a small bowl. When ready to cook the chicken, heat enough oil to just cover the surface of a large frying pan. Once hot, cook the chicken pieces for 2-3 mins on each side (in batches so you don’t overcrowd the pan) until golden and cooked through. Drain on kitchen paper. Serve warm with the dip on the side.
