Hiya! Today we will discuss about Beef Satay

Ingredients:

Beef undercut 1 kg
Ground lemon grass 1/2 cup
Finely chopped onion 1
Garlic cloves 2
Fresh red chilies 6
Finely chopped ginger 1
Turmeric 1 tsp
Coriander 1 tbsp
White cumin powder 1 tbsp
Brown sugar 1 tbsp
Fish sauce 2 tbsp
Dark soya sauce 3 tbsp
Oil as required
Salt to taste
Wooden skewers 1 dozen

Method:

Put lemon grass, onion, garlic, red chilies, ginger, turmeric, coriander, cumin, soya sauce, fish sauce, brown sugar and salt in bowl, make thick paste and marinate beef pieces with this mixture for 30 minutes.
Now heat grill pan.
Soak skewers in water for 15 minutes, skew masala beef pieces and keep on grill pan.
Brush it with some oil.
Turn it for a while.
When beef tender, take it out and serve hot.

Tip all the ingredients into a saucepan and bring to a gentle simmer over a low heat. Cook for 10 mins, or until the cranberries have burst and the sauce is thick, glossy and sticky. Chicken stew recipe

Heat the oil in your largest pan – an extra-large wok with a lid is ideal. Fry the onion and garlic for a few mins until soft, then pour in the stock and stir in the potato and herbs. Add the chicken and bring to the boil. Stir in the carrots, parsnips and leeks, then cover the pan and leave to simmer on a low heat for 40-45 mins, stirring every now and then, until the chicken is tender. (Cool and freeze any extra portions, and use within 2 months – thaw at room temperature, then reheat in a pan until bubbling.) Serve with mash and peas, if you like.

Quick pork with mild spices

Heat 1 tbsp of the oil in a wok or large frying pan until very hot. Add the pork and stir fry for 3-4 mins until it starts to brown. Remove from the pan, set aside and wipe the pan out with a piece of kitchen paper. Pour the remaining oil into the pan and tip in the spices. Cook over a medium heat for a minute to release their aromas. Pour in the chicken stock and cook for about 3-4 mins over a high heat until reduced by about half. Toss in the peas. Take it off the heat and stir in the yogurt. Season if you want to. Add the pork and warm through, then scatter over the coriander. Serve with some rice.

Chicken, butter bean & pepper stew

Heat oven to 180C/160C fan/gas 4. Heat the oil in a large flameproof casserole dish. Add the onion, celery and peppers, and fry for 5 mins. Add the garlic and paprika, and cook for a further 3 mins. Stir in the tomatoes, stock and butter beans, and season well. Bring to the boil, then nestle the chicken thighs into the sauce. Cover with a tight-fitting lid and put in the oven for 45 mins.
