Recipe Description

This indulgent granola combines the flavors of banana, toffee, and pecans. It’s the perfect treat for breakfast, a snack, or a topping for yogurt or ice cream.

Ingredients

  • 2 cups rolled oats
  • 1 cup pecans, chopped
  • 1/2 cup dried banana chips
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the oats, pecans, and banana chips.
  4. In a separate bowl, whisk together the coconut oil, honey, maple syrup, vanilla extract, and salt.
  5. Pour the wet ingredients over the dry ingredients and stir until well combined.
  6. Spread the mixture evenly on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Let cool completely before breaking into clusters.
  9. Store in an airtight container.

Tips

  • For a crunchier granola, add some chopped almonds or walnuts.
  • If you don’t have dried banana chips, you can use ripe bananas, mashed and dried in a dehydrator or low oven.
  • To make a vegan version, use vegan coconut oil and maple syrup.
