Crunchy papad in a sabzi avatar.
PAPAD KI SABZI
Ingredients
8 roasted papads
1 tbsp oil
½ tsp mustard seeds
1 tsp cumin seeds
A pinch of asafoetida ( hing)
2 medium onions, chopped
1 tbsp ginger-garlic paste
¾ cup fresh tomato puree
1 cup yogurt
1 tsp red chilli powder
¼ tsp turmeric powder
1 tsp coriander powder
Salt to taste
1 tsp chopped jaggery
½ tsp garam masala powder
½ cup roughly chopped fresh coriander + for garnish
¼ tsp roasted and powdered kasuri methi
Method
1. Heat oil in a deep non-stick pan, add mustard seeds and cumin seeds. Sauté till it changes color. Add asafoetida and mix well.
2. Add onions and sauté till onions turn golden brown. Add ginger-garlic paste. Sauté till raw flavor goes away. Add tomato puree and mix well. Cover and cook on medium heat for 4-5 minutes or till oil separates.
3. Add yogurt and mix well. Cook on medium heat for 2-3 minutes. Add red chilli powder, turmeric powder and coriander powder. Mix well. Sauté for 2-3 minutes on medium heat.
4. Add salt and jaggery, garam masala powder. Mix well. Cook for 2-3 minutes on medium heat.
5. Crush and add papads, coriander. Mix well. Add little water and mix well. Add kasuri methi and mix well. Cover and cook for 2-3 minutes on medium heat.
6. Transfer in a serving bowl.
7. Serve hot, garnished with coriander sprig.
