Ingredients

Mutton paye 4

Meat 1 kg

Red chili (grounded) 2 tsp

Black cumin 1 tsp

Ghee 1 cup

Turmeric 1/4 tsp

Coriander seeds (grounded) 1, 1/2 tsp

NationalSalt 1 tbsp

Onion 1 large

National Ginger paste 1 tsp

National Garlic paste 1 tsp

Whole grain flour 1/2 cup (Mixed with water into a paste)

Cooking Directions

Boil paye separately in a pan until tender and enough stock remains.

 

In a clay pot put ginger, garlic mixed with water then add in ghee, mutton, chili, coriander,National salt, turmeric, chopped onion and cover and cook till it’s water dries.

 

Then saute the meat.

 

Add 3 cups of water, cover and cook on low flame till meat gets tender.

 

Then add paye and mix well.

 

Add flour paste while stirring.

 

Now add crushed black cumin.

 

Cook for a few minutes and remove.

 

Serve hot with chopped green chillies, lemon quarters naan.
