Masala Pulao:
Ingredients:
Boneless chicken cubes ½ kg
Onion finely chopped 1
Salt to taste
Turmeric ½ tsp
Yogurt 1 cup
White pepper ¾ tsp
Oil ¾ cup
Mix garam masala 1 tbsp
Green chili 8-10
Green coriander ½ bunch
Mace nutmeg powder ¼ tsp
Fennel powder ½ tsp
Cumin powder ½ tsp
Finely chopped ginger 1 tbsp
Tomato slice 1
Boiled pea as required
Fried onion to garnish
Basmati rice ½ kg soaked
Method:
Heat oil add onion and whole spices. Also add salt, white pepper, turmeric, ginger garlic paste, cumin powder and fennel powder roast well. Add yogurt and 2-3 green chili fry well. Add water. Also add ginger, mace nutmeg powder and soaked rice. Before simmering add tomato, pea, green chili and coriander. Dish out garnish with fired onion.
Chicken Nargasi kofta:
Ingredients for kofta:
Boneless chicken ½ kg
Salt to taste
Red chili powder 1 tsp
Turmeric ¼ tsp
All spice powder ½ tsp
Ginger garlic powder 1 tbsp
Roasted gram flour 2 tbsp
Green chili 2
Almond powder 1 tbsp
Fried onion grinded 2 tbsp
Boiled eggs 5
Oil for fry
Ingredients for gravy:
Oil ¾ cup
Ginger garlic paste 1 tbsp
Salt to taste
Red chili 1-1/2 tsp
Turmeric ¼ tsp
Coriander powder 1 tbsp
Yogurt ¾ cup
Fried onion grinded ½ cup
Mace nutmeg powder ¼ tsp
Method:
Blend chicken with salt, red chili powder, turmeric, green chili , onion, almond powder, all spice powder and ginger garlic paste. Add roasted gram flour mix and leave it for 15-20 minute. Boiled egg and remove shell. Add in mince mixture and fry well. For gravy heat oil add ginger garlic paste, salt, red chili , turmeric, coriander and yogurt fry well. Also add fried onion. Add meat ball cook. After that add mace nutmeg powder and water cook for 10 min. dish out garnish with eggs.
Palak ka raita:
Ingredients:
Yogurt 250 gram
Boiled spinach ½ cup
Green chili (finely cut) 1 tsp
Green coriander 2 tbsp
White cumin ½ tsp
Milk 4 tbsp
Salt to taste
Spinach (finely cut) 1 cup
Raisins 1 tbsp
Oil for frying
Cream 2 tbsp
Method
Heat 2 tbsp oil in a pan then fry white cumin and green chilies in it. Then add boiled spinach and green coriander and cook for a while. Now add cream and mix well and let it cool down. Then add salt in yogurt and beat well. Now add 4 tbsp oil and raisins then take out in a bowl. Then deep fry rest of the spinach so that it gets crispy. Now take out and pour on prepared raita.
