SHEERA

Ingredients

1 cup fine semolina (rawa/suji)
2 tablespoons ghee
2 cups milk
Few saffron strands
¼ cup mixed dry fruits (cashewnuts and almonds)
2 medium bananas
½ teaspoon green cardamom powder
1 cup sugar

Method

1. Heat ghee in a deep non-stick pan.
2. Boil milk and 2 cups water in another deep non-stick pan.
3. Add fine semolina and saffron strands to hot ghee and sauté on low heat till light golden brown.
4. Add mixed dry fruits to sautéed semolina.
5. Peel and cut bananas into small pieces and add to semolina mixture, mix and sauté till the semolina turns dark golden brown.
6. Add boiling milk mixture to sautéed semolina mixture and mix. Add cardamom powder, mix, cover and cook till the semolina absorbs the milk.
7. Add sugar, mix, cover and cook for 10 minutes or till the moisture evaporates, stirring occasioanally. Remove from heat and slightly cool.
8. Serve warm.
