Mango Mix Pickle Recipe

Pickles considered as very special part of food in South Asian households. No matter whatever you cook, most of the Pakistani dishes can pair with delicious mixed pickle. Mango pickles are not just great in flavour but also have its own health benefits. It also makes an ordinary dish exceptional. I can still remember big Achaar – martabans(pots made with limestone) in our backyard that are mostly prepared by my paternal aunt and my grandmother. Recipe that I am going to share today is authentic yet quick and full of desi chatkhara

Ingredients :

  • Raw mango, 8-9 ( washed , dried , cut in bite size pieces and remove its big soft seed).
  • Bullet green chillies ,7-8 cut in bite size pieces
  • Garlic cloves ,20-22 ( cut them in to halves if big in size)
  • Salt , according to your taste
  • Kashmiri dried chillies, 2-3 ( remove seeds and cut in bite size pieces)
  • Kalongi or black seeds ,1 tablespoon
  • Fenugreek seeds, 1 tablespoon
  • Fennel seeds or sonf ,2 and half tablespoon
  • Whole mustard seeds , 1 tablespoon
  • Mustard oil or sarson ka tel ,500 ml
  • Crushed red chillies, half a teaspoon

Directions :

First of all coarsely grind all of the spices including black seeds,fennel seeds ,fenugreek seeds ,whole mustard seeds and crushed dried red pepper and keep them aside. Heat up oil in a pan on high flame for about 30-40 seconds then add raw mango slices along with green chillies and garlic pieces. Cook for 2-3 minutes so that mango slices will become somewhat soft .Now add spice mix that we made earlier and cook on medium heat for about one more minute. Finally add salt and mix all of the ingredients very well. You can adjust amount of chillies and salt at this stage and turn off the flame. Let the pickle cool down completely and once it attains room temperature convert it in to a glass or plastic jar. Make sure that the pickle is fully covered with its oil so that you can enjoy it for a longer time. Total preparation time for this recipe is 15 minutes and cooking time is about 10 minutes.

Note: Let the pickle set in 2-3 days at room temperature then transfer it in to the refrigerator. Enjoy !
