Freshly ground spice powder mix used for making Bisi Bele Bhat.

HULIANNA MASALA

Ingredients

¼ cup split Bengal gram (chana dal)
2 tablespoons split skinless black gram (urad dal)
4 green cardamoms
4-5 cloves
1 inch cinnamon, broken
1 teaspoon cumin seeds (jeera)
1 teaspoon fenugreek seeds (methi dana)
4-5 dried red chillies

Method

1. Dry roast Bengal gram and black gram, one by one, till browned. Remove from heat and set aside.
2. In the same pan, dry roast cardamoms, cloves, cinnamon, cumin seeds, fenugreek seeds and dried red chillies till fragrant.
3. Grind roasted spices together to a coarse powder.
4. Use as required.
