DRAGON CHICKEN
Ingredients
250 grams boneless chicken legs, cut in ½ inch pieces
1 tablespoon ginger-garlic paste
Salt to taste
Crushed black peppercorn to taste
½ teaspoon red chilli powder
1 tablespoon cornflour
1 tablespoon refined flour (maida)
1 tablespoon oil + for deep-frying
1 teaspoon chopped ginger
1 tablespoon chopped garlic
1-2 green chillies, finely chopped
1 tablespoon dark soy sauce
2 tablespoons tomato ketchup
Salt to taste
1 teaspoon red chilli powder
¼ cup chicken stock
8-10 cashewnuts, halved and fried
1 small red capsicum, cut in triangles
1 small yellow capsicum, cut in triangles
1 tablespoon chopped spring onion green + for garnishing
1 teaspoon vinegar
Method
1. Put chicken pieces in a bowl. Add ginger-garlic paste, salt, crushed peppercorns, chilli powder, cornflour and refined flour. Mix well and set aside for 15-20 minutes.
2. Heat sufficient oil in a kadai. Deep-fry chicken pieces till golden brown and crisp. Drain on absorbent paper.
3. Heat 1 tablespoon oil in a non-stick pan. Add ginger, garlic and green chillies, mix and sauté for a minute.
4. Add soy sauce, tomato ketchup, salt and chilli powder and mix well. Add stock and stir.
5. Add cashewnuts, red capsicum, yellow capsicum, crushed peppercorns and spring onion greens and mix well.
6. Add fried chicken and mix well. Add vinegar, mix well and cook for 1-2 minutes.
7. Garnish with spring onion greens and serve hot.
