Dahi Aalu Masala
Ingredients:
Chopped potatoes ½ kg
Yogurt 1 cup
Red chili powder 1-1/2 tsp
Coriander powder 1 tsp
Turmeric ¼ tsp
Salt as required
Clarified butter 4 tbsp
Oil 4 tbsp
Roasted gram flour 1 tbsp
Mustard ½ tsp
White cumin ½ tsp
Fennel ½ tsp
Asafoetida 1 pinch
Crushed ginger 1 tsp
Whole red chilies 6-7
Green chilies 3-4
Method:
Heat oil add mustard, fennel, asafoetida and whole red chilies fry well. Add cumin and ½ cup of water. Add turmeric, red chili powder and cumin powder mix well. Add yogurt cook well. Add roasted gram flour, ½ cup of water and potatoes cook for 10 minutes. Garnish with green chilies.

Lucknowi Chicken Kundan Kalia:
Ingredients:
Chicken boneless 500 gm
Red chili 1-1/2 tsp
Coriander powder 1 tsp
Salt to taste
Chopped onion 1
Chopped tomatoes 2
Mix whole all spice 1 tbsp
Cumin powder ½ tsp
Clarified butter ½ cup
Cream 2 tbsp
Rose petals 2 tbsp
Green coriander 2 tbsp
Lemon sliced 3-4
Turmeric ¼ tsp
All spice powder ½ tsp
Yogurt ¾ cup
Method:
Apply yogurt, turmeric and cumin on chicken and left for ½ hour. Heat clarified butter add whole spice and onion fry well. When it turns golden add chopped onion, tomatoes, red chilies, turmeric, cumin powder and yogurt cook well. Add chicken fry well. Also add rose petals, all spice powder and cream cover and cook. Remove from dish garnish with lemon juice, rose petals and green coriander, serve.
