Chicken Bihari Qorma:

Ingredients

Chicken                                 ½ kg

Brown onion                        ½ cup

Yogurt                                   ½ cup

Salt                                         1 tsp

Roasted & crushed cumin1 tsp

Allspice                                  1 tsp

Coriander powder             1 tsp

Chili powder                        1 tsp

Water                                    1 cup

Saffron                                  ¼ tsp

Method:

Put all the above ingredients in a pan, cook on low flame till chicken tender and water dries, add half cup oil, bhuno well until oil floats on top, lastly add zafran, serve with sheermaal.

Anarkali raita:

Ingredients

Yogurt whipped                              1 ½ cup

Crushed red pepper                      ½ tsp

Salt                                                     ½ tsp

Cumin roasted & crushed            1 tsp

Potatoes boiled                              2

Coriander leaves                             2 tbsp

Pomegranate  powder                 ½ tsp

Ginger chutney                               2 tbsp

Method:

Beat yogurt add in all the ingredients except potato, transfer in a serving dish surround with sliced potatoes boiled, drizzle with sonth chatni, garnish with chopped coriander leaves, serve chilled.

Lajwab roghni chaanp:

Ingredients:

Chops                                    ½ kg flattened

Salt                                         1 tsp

Raw papaya                         1 tbsp

Hung curd                            3 tbsp

Ginger garlic                        1 tbsp

Lemon juice                         1 tbsp

Clarified butter                   2 tbsp

Allspice                                  1 tsp

Kabab chini grinded          pinch

Coriander  powder            1 tsp

Tandoori masala                 2 tbsp

Other ingredients:

Capsicum                              1

Onion                                     1

Tomato                                 1

Green chilies                        4

Parathas                               to serve

Method:

Marinate chops with all the given ingredients for 1 hour. Heat ¼ cup oil, fry sliced onion until soft, add marinated chops, fry for 10 mins, add 1 cup water, cover and cook till nearly done, add in the vegetable julienne, leave it to cook on very low flame, do not cover for 10 mins, serve immediately.

Sonth ki chutney:

Ingredients

Tamarind pulp                                 ½ cup

Jiggery                                               ½ cup

Chili powder                                    ½ tsp

Fennel powder                               1 tsp

Ginger powder                               1 ½ tsp

Cumin roasted & crushed            1 tsp

Coriander powder                         1 tsp

Allspice                                              ½ tsp

Black salt                                           ½ tsp

Water                                                ½ cup

Method:

Put all the ingredients together in a pan, cook for 10 mins till thick, remove, cool, use with kababs.
