CARIBBEAN PAN FRIED FISH
Ingredients
4 medium red snapper, cleaned
Salt to taste
Crushed black peppercorns to taste
4 tsps paprika
1 tsp all spice
2 tsps dried mixed herbs
A large pinch of nutmeg powder
4 tsps finely chopped garlic
2 lemons
2 tsps Tobasco sauce
6 tsps + ¼ cup olive oil
8-10 garlic cloves, unpeeled
4-5 thyme sprigs
Tossed assorted vegetables to serve
Sliced spring onion greens for garnish
Lemon slices for garnish
Method
1. Make diagonal incisions on both sides of the fish. Transfer them on a plate.
2. Sprinkle salt and crushed black peppercorns on the fish. Sprinkle paprika, all spice, mixed dried herbs, nutmeg powder, and chopped garlic.
3. Squeeze lemon juice, Tabasco sauce, drizzle 6 tsps oil and rub well all over fish. Set aside for 1-2 hours.
4. Heat remaining oil in a non-stick pan; place the fish, garlic cloves and thyme sprigs. Shallow fry the fish till cooked from both sides. Take them off the heat.
5. Serve hot with tossed assorted vegetables and garnish with sliced spring onion greens and lemon slice.
