INGREDIENTS:
3 tbsp olive oil, divided
1 pound boneless skinless chicken breast
1 tbsp dried oregano
2 tsp ginger powder
Sea salt
1 tsbp freshly ground black pepper
3 cup chopped tomatoes
½ cup onion , chopped
3 cloves garlic, minced
1/4 cup freshly chopped basil
Shaved parmesan cheese, for garnish
METHOD:
In a large skillet over medium heat, heat 1 tablespoon of olive oil. On a plate, season chicken with oregano, garlic powder, salt, and pepper. Add chicken to skillet and cook until golden and no longer pink, 8 minutes per side. In a large bowl stir together tomatoes, olive oil, onion, garlic, and basil and season generously with salt and pepper. Top chicken with topping and shaved parmesan. Serve.
