Try this authentic Sindhi rice recipe that is not only simple to make but it also tastes downright delicious.

BHUGA CHAWAR

Ingredients

1½ cups rice, washed and soaked
2 tbsps ghee
4 green cardamoms
5-6 cloves
1 inch cinnamon stick
8-10 black peppercorns
1 bay leaf
2-3 slit green chillies
2 medium onions, sliced
1tsp garam masala powder
1tsp red chilli powder
Salt to taste
Boondi raita to serve
Fresh coriander sprigs for garnish

Method

1. Heat ghee in a deep non-stick pan and add green cardamoms, cloves, cinnamon, black peppercorns, bay leaf, green chillies and onions. Sauté for a minute. Cover and cook on medium heat till onions turn golden brown.
2. Add garam masala powder, red chilli powder, salt and mix well. Add rice and 3 cups of water. Cover and cook on medium heat till rice is done.
3. Serve hot with boondi raita garnished with coriander sprigs.
