Make this egg-citing Pav bhaji when you are bored of the regular one!
ANDA PAV BHAJI
Ingredients
8 eggs
2 tbsps + 2 tsps pav bhaji masala powder
8 pavs, butter toasted to serve
1½ tbsps oil
2 tbsps + 8 tsps butter
1 large onion, chopped
1 tbsp ginger-garlic paste
1 large tomato, chopped
1 cup tomato puree
½ cup grated carrot
1 medium capsicum, chopped
2 medium potatoes, boiled, peeled and mashed
Salt to taste
1½ tbsps freshly chopped coriander leaves + garnish
1 cup grated mozzarella cheese
Method
1. Heat oil in a non-stick pan, add 1 tbsp butter and let it melt. Add onion and sauté till golden brown.
2. Add ginger-garlic paste and sauté for 1 minute. Add tomato and sauté well for 1 minute.
3. Add tomato puree and mix well. Cook till soft and pulpy. Add carrot, capsicum and mix well.
4. Add potatoes, salt, pav bhaji masala powder, mix well and cook for 1-2 minutes.
5. Add 1 cup water and mix well. Mash the mixture with a masher till well combined. Cook for 1-2 minutes.
6. Add 1 tbsp butter, chopped coriander and mix well. Take it off the heat.
7. In a bowl, break eggs in it, add salt, remaining pav bhaji masala powder, and whisk till well combined.
8. For 1 portion, heat another non-stick pan, add 2 tsps butter and let it melt. Add a portion of the prepared egg mixture and spread it evenly.
9. Slightly mix it in the centre, pushing the cooked portion towards the edges and cook for 2-3 minutes.
10. Add a portion of the prepared bhaji on half of the omelette and sprinkle grated mozzarella cheese and cover it with the remaining half. Cook for a few seconds and take it off the heat.
11. Garnish with chopped coriander and serve hot with pavs.
