ALOO HALWA
Ingredients
¼ cup ghee
2 tbsps raisins (kishmish)
2 tbsps cashew nuts, halved
8-10 almonds, slivered
3 large potatoes, boiled, peeled and mashed
½ cup grated mawa/khoya
½ cup sugar
¼ cup milk
½ tsp green cardamom powder
A large pinch of saffron + for garnish
Chopped pistachios for garnish
Method
1. Heat ghee in a non-stick kadai, add raisins and cashew nuts and roast till golden brown. Add almonds and sauté for a minute.
2. Add potatoes and mix and sauté for 2-3 minutes. Add mawa, sugar, milk and green cardamom powder and mix and sauté for 4-5 minutes.
3. Add saffron and mix, cook for 1-2 minutes. Take the pan off the heat and transfer into serving bowls.
4. Garnish with chopped pistachios and saffron. Serve warm.
