Fresh turmeric is in season and you can make the most of it with this extraordinary Chicken Tikka recipe!
FRESH TURMERIC CHICKEN TIKKA
Ingredients
400 grams boneless chicken thighs, cut into 1 inch pieces
½ tbsp ginger-garlic paste
1 tsp green chilli paste
Salt to taste
2 inch fresh turmeric piece, roughly chopped
2 tbsps gram flour (besan)
¼ cup yogurt
¼ tsp carom seeds (ajwain)
2 tbsps fresh cream
2 tbsps mustard oil
1 tsp Tata Sampann Kasuri Methi
Butter for basting
Chaat masala for sprinkling
Onion rings to serve
Lemon wedge to serve
Green chutney to serve
Method
1. For first marination, take 400 grams boneless chicken legs cut into 1 inch piece large bowl, ½ tbsp ginger-garlic paste, 1 tsp green chilli paste, salt and mix well. Set aside for 15 minutes.
2. In a blender jar, 2 inch fresh turmeric roughly chopped along with 2 tbsps water and blend to a fine paste.
3. In another bowlm add 2 tbsps besan, ¼ cup yogurt, prepared paste, ¼ tsp carom seeds, 2 tbsps fresh cream, 2 tbsps mustard oil and salt, whisk well. Transfer into the chicken mixture and mix well.
4. Add 1 tsp Tata Sampann Kasuri Methi and mix well. Set aside for 25-30 minutes.
5. Preheat the oven at 180˚C.
6. Transfer the chicken on to a baking tray and bake for 20-25 minutes. Baste with butter in between.
7. Transfer the prepared tikka on a serving plate and sprinkle chaat masala on top. serve hot with onion rings, lemon wedge and green chutney.
