Butterscotch Phirni:
Ingredients:
Milk 1-1/2 liter
Rice (soaked) 1/4cup
Small cardamom (powder) 1/2tsp
Sugar 8tbsp
Rose petals for garnishing
Cream 4tbsp
Butter 2tbsp
Brown sugar 2tbsp
Pistachios (finely cut) 2tbsp
Clay pots 6
Method:
Firstly boil the milk. Now add crushed rice in a cup of water and mix it with milk and keep moving the spoon. When it thickens then add small cardamom and sugar to cook. Then melt brown sugar and add cream and butter and mix it thoroughly and add some of it in firni and keep some. Now in mud pots add the firni with it pour little sauce. Garnish it with rose petals and serve.
Matar Paneer Pulao:
Ingredients:
Rice ½ kg
Onion (fried) 3 tbsp
Yogurt ½ cup
Whole all spice 1 tbsp
Bay Leaf 1
Oil ¾ cup
Ginger Garlic Paste 1 tbsp
Fennel Seeds Powder 1 tsp
Nutmeg, Mace Powder ¼ tsp
Salt to taste
Green Peas 1 cup
Cottage Cheese (cubes) 1 cup
Eggs(boiled) as required
Method:
Soaked rice for 15 minutes. Now in a pan, heat oil add whole garam masala, ginger garlic paste, salt, fennel seeds powder, yogurt and fry.Then add water and cook until boil.After this, add soaked rice and cook on high flame. Now add boil green peas, nutmeg powder, mace and let it simmer. Now add cottage cheese and fry. When rice is done then take it out in a dish. Add add cottage cheese, boiled eggs and serve.
Nauratan Qeema:
Ingredients:
Mince (chicken) 250 gm
Mince (beef) 500 gm
Brain (mutton) 2
Ginger Garlic Paste 2 tbsp
Fried Onion ½ cup
Yogurt ¾ cup
Cream 6 tbsp
Cheddar Cheese 6tbsp
Almond Powder 1 tbsp
Cumin Seeds Powder 1 tbsp
Salt 1-1/2 tsp
Red chili Powder 1 tbsp
Green Chili Paste 1 tbsp
All spice Powder 1 tsp
Papaya Paste 1-1/2 tbsp
Nutmeg, Mace Powder ½ tsp
Clarified butter ¾ cup
Turmeric ½ tsp
Butter 4 tbsp
Fenugreek Leaves as required
Finely Chopped Ginger for garnish
Green Chilies, Coriander Leaves for garnish
Coal 1 piece
Method:
In a pan, add water,brain, turmeric and boil.
Now in a chicken mince add beef mince, salt, ginger garlic paste, papaya paste, red chili powder, turmeric, fried onion, cumin seeds powder, all spice powder, nutmeg, mace powder, clarified butter and leave it 4 to 5 hours. Then heat clarified butter add marinated mince and fry.
Now add almond powder, cream, cheddar cheese, butter, red chili powder and fry well. Add boiled brain and mix. After this, add fenugreek leaves and let it simmer for few minutes.
Then give coal steam.In the end, take it out in a dish garnish with onion, ginger, green chilies , coriander leaves and serve.
