Ingredients

12 tacos shells

¼ medium cabbage, shredded

1 medium carrot, grated

1 small green capsicum, cut into thin strips

1 small yellow capsicum, cut into thin strips

1 small red capsicum, cut into thin strips

50 grams cottage cheese, cut into small cubes

National Salt to taste

National Black pepper powder to taste

¼ cup Nutralite Veg Mayonnaise

2 tablespoons Tomato ketchup

1 spring onion, cut into thin strips

 

Mix the cabbage, carrot, green capsicum, yellow capsicum, red capsicum, cottage cheese, salt and pepper powder in a bowl.

Mix Nutralite Veg Mayonnaise and tomato ketchup in another bowl.

Place a tablespoon full of the vegetable mixture into each taco shell.

Drizzle a little of the mayonnaise mixture, garnish with the spring onions and serve immediately.
