Ingerdients:
rice 500g
green Chile 2
National cumin seeds 1tbs
mix veg 1/2 kg packet (carrots, corn, peas,cauliflower, broccoli or any veg you like)
potatoes 2 large (cubed)
National Biryani Masala
bell pepper 1 large (cubed)
bullet green chilli 3
tomatoes 4 large chopped
onions 1 large chopped
National ginger & garlic paste 1 tbs
fried onions 1 cup
yogurt 1/2 cup
dried fenugreek leaves 2tbs
dried plums 12 pieces
kewra water with 1/2 tsp yellow food colour
National red chilli powder 1tsp heaped
National coriander powder 1 tbs heaped
National garam masala powder 1 tsp
National salt 1 1/2 tsp
National turmeric powder 1/2 tsp
fresh coriander 1/2 bunch
dill 1/2 bunch
oil 1/2 cup
Recipe:
RICE: boil the rice with 2 tbs salt, 1tbs cumin seeds and 2 bullet green chilli, 80% cook them and keep aside.
heat the oil in a pan add the onions, ginger & garlic paste and cook till gets golden colour, on high flame.
add the tomatoes, dried fenugreek leaves, turmeric, National Biryani Masala ,salt, coriander powder, red chilli powder, gram masala mix well and cook on high flame till the oil comes on surface and the tomatoes get cooked.
then add the mix veg and the potatoes, 1/2 cup of water mix well, wait for a boil and then lower the heat to medium and cook till the potatoes are cooked and the water dries and the oil comes on the surface.
then add the yogurt and cook on high flame till the yogurt also dries.
now add the dried plums, bell peppers, dill mix well and cook for further 2 minutes on high flame, and keep aside.
to layer the biryani, first a layer of the veg then 80% boiled rice, then mix veg, remaining rice, then the fried onions, fresh coriander, kewra water and the yellow food colour mix, green chillies.
cover the lid with a tea towel and place on the pot of rice, place the pot on the stove first 5 minutes on high flame and 10 minutes further on low.
