Recipe Description

This moist and flavorful cake combines the warm spices of ginger with the sweetness of white chocolate. It’s the perfect treat for any occasion.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup buttermilk
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9×5 inch loaf pan.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk.
  7. Stir in the white chocolate chips.
  8. Pour the batter into the prepared pan.
  9. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Tips

  • For a richer flavor, use dark brown sugar instead of white sugar.
  • You can glaze the cake with a simple lemon glaze or a white chocolate ganache.
  • To make the cake extra moist, add a tablespoon of coffee to the batter.
