A quick and simple mixed vegetable recipe that goes well for lunch as well as dinner.
MIXED VEGETABLE
Ingredients
6-8 button mushrooms cut into small pieces
10-15 cauliflower florets, blanched
1 medium carrots, peeled, cut into ½ inch pieces and blanched
8-10 French beans, cut into ½ inch pieces and blanched
½ cup green peas, blanched
3 tbsps oil
1 tsp cumin seeds
2 medium onion, finely chopped
1 large tomato, finely chopped
Salt to taste
1 tsp red chilli powder
½ tsp turmeric powder
1 tbsps coriander powder
½ tsp dried fenugreek powder
1½ tbsps kaju-magaz paste
¼ tsp garam masala powder
1 tsp dried fenugreek leaves
Sprig of coriander for garnish
Method
1. Heat oil in a non-stick pan, addcumin seeds and let the colour change. Add onion andsauté till golden brown.
2. Add tomato, and salt, mix well. Cover and cook till the tomato is pulpy.
3. Add red chilli powder, turmeric powder, coriander powder, dried fenugreek powder, mix well and cook for 1 minute.
4. Add kaju-magaz paste and mix well. Add 1 cup water and mix well. Add mushrooms, mix well. Cover and cook for 2 minutes.
5. Add cauliflower, carrots, French beans, and green peas Mix well and add ½ cup water. Mix well and cook for 2 minutes.
6. Add garam masala powder, crush dried fenugreek leaves and add to the cooked mixture, mix well.
7. Transfer to a serving bowl, garnish with coriander sprig and serve hot.
