Yam Fritters, Suran Pakoda
A mixture of yam and besan perked up with peanuts, red chillies and onions is used to make scrumptious pakodas, which have a unique crunch brought about by the yam. A teaspoon of fennel seeds along with coriander and curry leaves give the Yam Fritters a lip-smacking flavour and tantalising aroma. Just ensure that you make the pakodas as soon as you mix the ingredients, as the batter tends to get watery if left for long. The Suran Pakoda is perfect to serve as a tea-time snack .
Preparation Time: 15 minutes.
Cooking Time: 30 minutes.
Serves 4.
1 cup grated yam (suran)
½ cup freshly grated coconut (nariyal)
¼ cup roasted peanuts
3 whole dry Kashmiri red chillies, broken into pieces
1 tsp fennel seeds (saunf)
½ tsp turmeric powder (haldi)
½ cup besan (bengal gram flour)
¼ cup finely chopped onions
2 tbsp chopped curry leaves (kadi patta)
2 tbsp finely chopped coriander (dhania)
Salt to taste
Oil for deep-frying
1. Combine the yam, coconut, peanuts, red chillies, fennel seeds and turmeric powder and ½ cup of water in a mixer and blend it to a coarse mixture.
2. Transfer the mixture into a deep bowl, add the besan, onions, curry leaves, coriander and salt and mix well.
3. Heat the oil in a deep non-stick pan and drop small spoonful of the mixture into the hot oil, a few at a time, on a medium flame till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
Serve immediately.
