Boiled egg halves tossed in onion tomato masala with the spicy flavour of black peppercorns.
EGG PEPPER MASALA
Ingredients
4 eggs, hard boiled, peeled and halved
1 tablespoon crushed black peppercorns
2 tablespoons oil
½ teaspoon fennel seeds (saunf)
1 teaspoon coriander seeds
1-2 green chillies, slit
10-12 curry leaves
1 medium onion, sliced
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
½ cup tomato puree
Salt to taste
Fresh coriander sprig for garnishing
Method
1. Heat oil in a non-stick pan. Add fennel seeds and coriander seeds, mix and sauté well.
2. Add green chillies and curry leaves, mix and sauté till leaves crackle. Add onion, mix and sauté till translucent.
3. Add chilli powder, turmeric powder and crushed peppercorns and mix well. Add tomato puree, mix and cook for a minute.
4. Add salt and mix. Add eggs, mix lightly and cook for 1-2 minutes.
5. Garnish with coriander sprig and serve hot.
