Surf And Turf:
Ingredients:
Steak fillets 2
Prawns ½ kg
Asparagus 3-4
Cauliflower 1 small
Zucchini 1
Rosemary 1 tsp
Lemon 1
Olive oil as required
Salted butter ½ cup
Garlic 4-6 cloves
Garlic powder 1 tsp
Black pepper 1 tsp
Salt to taste
Sugar as required
Salt 1 tsp
Onion powder 1 tsp
Paprika 1 tbsp
Brown sugar 2 tbsp
Method:
Mix salt, onion powder, paprika and brown sugar. Now marinate steak fillets in lots of olive oil, the mix and garlic. Heat butter until almost melted, add ground pepper, garlic. Add steaks and sear on each side for 2-3 minutes. Remove and set aside. Now add prawns to same pan and cook on high heat. Remove and set aside.
In a separate pan heat butter or olive oil. Add rosemary, cauliflower. Season with salt, garlic, ground pepper and sugar. Cook uncovered until cauliflower florets appear caramelized. Remove and set aside. Put Asparagus and Zucchini in a sauté pan and drizzle with Olive Oil, Garlic powder and ground pepper. Roast for 5 minutes.
Place steak Filets in a pan. Place vegetables around. Drizzle with any remaining butter/olive oil. Bake at 200 degrees C for 25-30 minutes. Serve steaks with prawns and cauliflower and the roasted vegetables. Garnish with Lemon slices and sprinkle more rosemary.
Chocolate Mocha Cookies:
INGREDIENTS
Cocoa powder ¼ cup
Baking soda ½ tsp
Cream of tartar 1 tsp
Salt ¼ tsp
Flour 1-1/3 cups
Flour 2 tbsp
Unsalted butter 1/2 cup
Caster sugar 3/4 + 1/3 cup
Egg 1
Vanilla essence 1 tsp
Coffee powder 1-1/2 tsp
Cinnamon powder 2 tsp
Method:
Mix cocoa, baking soda, cream of tartar, salt and flour. Set aside. Beat butter and 3/4 cup caster sugar. Mix in egg, vanilla essence and coffee powder. Add the dry ingredients to the wet and mix until combined. Scoop dough onto silpat lined cookie sheets. Chill for 30 minutes. Mix remaining 1/3 cup caster sugar and cinnamon powder in a small bowl. Roll each cookie dough ball completely in the cinnamon sugar. Place back on baking sheets, 2” apart. Bake for 9-11 minutes.
