Puri:
Ingredients:
Fine flour 1 cup
Salt 1 tsp
Clarified butter 2 tbsp
Water as required
Sugar 1 tsp
Method:
Mix all ingredients in mixing bowl knead well. Leave for 10 minute to rinse. Make balls and roll. Heat oil and fry puri in pan.
Aalu Ki Tarkari:
Ingredients:
Boiled potatoes 500 gm
Oil ¼ cup
Ginger garlic paste 1 tbsp
Salt to taste
Turmeric powder ½ tsp
Crushed red chilies 1 tsp
Red chili powder 1 tsp
Nigella seeds 1 tsp
Fenugreek 1 tsp
All spice powder 1 tsp
Chopped coriander 1 tbsp
Water 3-4 cup
Method:
Heat oil fry ginger garlic paste well. Add all spices cook for 1 to 2 minute. Add mashed potatoes mix well. Add water and green coriander cook till gravy become thick.
Chanay Ki Tarkari:
Ingredients:
White chick peas boil 2 cup
Oil ¼ cup
Ginger garlic paste 1 tbsp
Onion paste ½ cup
Tomato paste ½ cup
Yogurt ¼ cup
Salt as required
Turmeric powder ½ tsp
Black pepper 1 tsp
Red chili powder 1 tsp
Fenugreek (dried) 1 tsp
All spice powder 1 tsp
Water as required
Method:
Heat oil add ginger garlic paste cook well. Add all spice cook for 1 to 2 minute. Add onion paste and yogurt cook for 5 to 6 minute. When oil separate from gravy add chickpeas mix well. Add water cook more. Add fenugreek mix well
Suji ka Halwa:
Ingredients:
Semolina ½ cup
Clarified butter ½ cup
Cardamoms 4-6 small
Red ashrafi 1 tbsp
Green ashrafi 1 tbsp
Chopped coconut 1 tbsp
Red food color ¼ tsp
Sugar 1 cup
Water 1-1/2 cup
Method:
Heat clarified butter add cardamom fry well. add semolina cook well.
