When you are fasting you need to make sure your body gets enough nutrients to function well. Incorporating Singhara in your fasting meals will give you just that. This wholesome Singhad and Arbi Parantha is a perfect example of energy boosting & delicious Vrat ka khana!
SINGHADA PARANTHA WITH ARBI
Ingredients
1½ cups singhada atta + for dusting
6-7 colocasia (arbi), boiled, peeled and mashed
1 inch ginger, finely chopped
2 green chillies, chopped
1 tbsp chopped fresh coriander leaves
Senda namak to taste
1 tsp ghee + for drizzling
Method
1. Take singada atta in a large bowl, add arbi, ginger, green chillies and chopped coriander. Add senda namak and mix well. Add sufficient water and knead to a soft dough.
2. Apply ghee and knead till well combined. Set aside for 15-20 minutes.
3. To make the paranthe, take a portion of the dough and shape into a ball. Dust the worktop with singhada atta and flatten the dough ball slightly. Roll into a thin disc.
4. Heat a non-stick tawa, place the parantha on it, cook till golden brown on both sides. Apply ghee on each side and cook for 1 minute.
5. Serve hot.
