Classic Italian pasta gets an oriental twist in this recipe.
1½ cups boiled penne pasta
2 chicken breasts, cut into 1 inch cubes
2 tbsps blended sesame oil
1 tbsp finely chopped garlic
½ inch ginger, finely chopped
2 spring onion bulbs, chopped
3-4 shitake mushrooms, sliced
6-7 button mushrooms, quartered
1 pak choy, sliced
3 tsps light soy sauce
2 tsps dark soy sauce
1 tbsp corn starch slurry
1 tsp brown sugar
2 tbsps chopped spring onion greens + for garnish
Salt to taste
2 tsps toasted sesame seeds + for garnish
Method
1. Heat sesame oil in a non-stick pan, add chicken and sauté on high heat for 3-4 minutes. Take the pieces out and set aside in a bowl.
2. In the same hot oil, add garlic, ginger, spring onion bulbs, and sauté well for 1 minute.
3. Add shitake mushrooms and button mushrooms, and sauté well. Cook for 2-3 minutes.
4. Add pak choy, light soy sauce, dark soy sauce, corn starch slurry, brown sugar, and mix well.
5. Add the prepared chicken pieces and pasta, mix well and cook for 1-2 minutes.
6. Add chopped spring onion greens, salt, sesame seeds, and mix well.
7. Garnish with chopped spring onion greens and sesame seeds. Serve hot.
