Deep fried paranthas served with shallow fried chicken seekh kabab, green chutney and onion rings.
SEEKH PARANTHA
Ingredients
1½ cups whole wheat flour
Salt to taste
2 tsp oil + to deep fry
4 readymade chicken seekh kebab
Green chutney as required
Onion rings for garnish
Chaat masala for sprinkling
1 lemon
16-18 fresh mint leaves
Method
1. Mix whole wheat flour, salt and 1 tsp oil in a bowl. Add sufficient water and knead to soft dough. Add remaining oil, knead and set aside for 10-15 minutes.
2. Divide the dough into equal portions and roll into balls. Flatten the balls, apply some oil and roll out into a big parantha. Prick with the help of a fork.
3. Heat sufficient oil in a kadai and deep fry the prepared paranthas. Drain on an absorbent paper and set aside.
4. Heat a shallow nonstick pan. Place the seekh kebab and shallow fry till crisp. Set aside.
5. Place a parantha on serving plate. Place 2 seekh kebabs.
6. Drizzle some green chutney. Place some onion rings and sprinkle some chaat masala.
7. Squeeze some lemon juice and place some mint leaves.
8. Serve immediately.
