250g plain flour, plus extra for dusting
½ tsp salt
1 tsp sugar
1 heaped tsp bicarbonate of soda
225ml buttermilk

Direction

Tip the flour into a large bowl and stir through the salt, sugar and bicarb. Make a well in the centre and pour in the buttermilk, then swiftly stir to combine. Tip onto a lightly floured surface and knead briefly. Roll into a roughly 20cm circle and cut into quarters. Heat a skillet or heavy-based frying pan over a low-medium heat. Add the farls and cook for 8-10 mins on each side, or until golden brown and cooked through. Remove from the heat and leave the farls to cool in the pan for 10 mins. Split open and eat warm with butter.

For the base, melt the butter in a saucepan, stir in the flour and cook for a few mins, stirring all the time. Now, using a whisk or spatula, carefully stir in the milk, a little at a time, making sure the sauce stays smooth. Bring the mixture to a simmer and cook for a couple of mins until it thickens – it will be very thick. Turn the heat right down and keep cooking for 5 mins, stirring often.

Meanwhile, heat the oil in a non-stick frying pan and fry all of the chicken in batches until it starts to colour lightly at the edges. Scoop out each batch of chicken and put it on a plate. Add the onion to the pan if you are using it, and cook over a low heat until soft. Add the chicken and any juices and the onion to the white sauce, fold it in and cook the mixture for a further 15 mins or until the chicken is cooked through. If you’re making the base ahead of time, you can leave it to cool at this stage then freeze in an airtight container for up to a month. (Defrost fully before using in the next step.)

Cook the pasta following pack instructions. Put the leeks in a pan with a little water, cover and cook until very soft. Drain, then return to the pan with the courgette, pesto and soft cheese, stir everything together, add the chicken base and stir well, then heat until just bubbling. Add a splash of water if it’s very thick.

Stir the pasta into the chicken mixture and tip into a large baking dish. Sprinkle over the breadcrumbs and grill the top until it browns.

Sticky pistachio chicken with jewelled bulgur salad

Heat oven to 200C/ 180C fan/gas 6. Put the chicken thighs in a roasting tin, skin-side up, season and cook for 40 mins. Meanwhile, pour the bulghar wheat into a saucepan and cover with cold water. Bring to the boil, then cover and simmer following pack instructions.

Combine the honey, olive oil and fish sauce in a small bowl. Remove the chicken from the oven, brush with the honey mixture, then sprinkle with the pistachios. Cook in the oven for 10 mins more.

Drain the bulghar wheat and tip into a bowl with the apricots. Allow to cool slightly before adding the pomegranate seeds. When the chicken is cooked through, add the juices to the bulghar wheat. Stir the parsley and chives into the salad and check the seasoning before serving with the chicken thighs.

Heat oven to 180C/160C fan/gas 4. Toss the chicken wings in some oil and seasoning in a baking tray. Cook for 30 mins. Combine the butter, hot chilli sauce, sugar and maple syrup in a saucepan with a good pinch of salt, and bubble until thick and glossy. Brush the mixture all over the chicken, then return to the oven for 20 mins – turning and painting halfway through cooking – until sticky. Serve with celery sticks and sour cream for dunking.
