Nutritional Ingredients

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1 tbsp tomato purée
  • 1 x 400g tin mixed beans, drained and rinsed
  • 1 x 400g tin chopped tomatoes
  • 1 tsp soy sauce or tamari
  • Salt & freshly ground black pepper to taste

Cooking Instructions

  1. Heat the olive oil in a skillet or pan over medium heat. Add the onion and cook for 4–5 minutes until softened.
  2. Stir in the garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant.
  3. Add the tomato purée and stir for another minute.
  4. Pour in the mixed beans and chopped tomatoes. Stir well and bring to a simmer.
  5. Add soy sauce and season with salt and pepper. Simmer for 10–15 minutes until thickened and smoky.
  6. Taste and adjust seasoning. Add optional toppings as desired.
  7. Serve hot with toasted bread, or spoon into bowls beside a campfire for the ultimate breakfast experience.
