Lemon rice is already a favourite to most of us, but if you want an alternative to the white rice, then you can try this Quinoa Lemon Rice. It has a nutty texture and a tangy flavour, a healthy and wholesome option for your weekday lunch.

QUINOA LEMON RICE

Ingredients

3 cups cooked quinoa
1 tbsp lemon juice
2 tbsps oil
¼ cup raw peanuts
½ tsp mustard
½ tsp chana dal
½ tsp urad dal
2 dried red chillies
7-8 currry leaves
½ tsp turmeric powder
Salt to taste
Coriander sprig for garnish

Method

1. Heat oil in a non-stick pan, add peanuts and sauté for 2 minutes on medium heat. Add mustard seeds, chana dal, urad dal, break and add dried red chillies. Sauté for a few seconds.
2. Add curry leaves and turmeric powder. Add cooked quinoa and mix till well combined. Add salt, mix well and cook for 3-4 minutes.
3. Add lemon juice and mix well. Take it off the heat and transfer to a serving dish.
4. Garnish with coriander sprig and serve hot.
