Barbeque Saucy chicken :

Ingredients

Chicken breast ½ kg
Salt ¼ teaspoon
Pepper 1/8 teaspoon
Onion cubed 1
Capsicum cubed 1
Barbecue sauce 2/3 cup
mango habanero sauce 1tbsp
Honey 1 tbsp
Method:
Sprinkle chicken with salt and pepper. Heat oil. Add chicken; cook 4-6 minutes on each side. Add onion and capsicum to same pan; cook. Add honey and barbecue sauce; heat through. Serve with chicken.

Quick Mousse:

Ingredients

Chocolate chopped 300gm
Eggs 3
Caster sugar ¼ cup
Cocoa powder 1 tablespoon
Cream 300ml
Grated chocolate as required
Method
Place the chocolate in a heatproof bowl over a pan of gently simmering water (don’t let the bowl touch the water). Stir until melted. Remove bowl from heat and set aside to cool slightly. Beat eggs and sugar in a bowl until mixture is pale, thick and doubled in volume. Fold in cocoa powder and cooled chocolate until combined. In a separate bowl, whip cream until thickened. Use a large metal spoon carefully fold the cream into the chocolate mixture, trying to keep the mixture as light as possible. Spoon into serving glasses and chill in fridge for at least 1 hour. Remove from fridge 15 minutes before serving, then top with extra whipped cream and grated chocolate to serve.
