Qeema:
Ingredients:
Minced meat 400 gm
Large onion chopped 1 large
Oil 3 tbsp
Ginger chopped 1 tbsp
Garlic, chopped 1 tbsp
Salt 1 tsp
Red chili powder 1 tsp
Red chili flakes ½ tsp
All spice powder 1 tsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Turmeric powder ½ tsp
To Serve:
Julienned ginger 1
Chopped green chilies 3
Red chili flakes a pinch
Method:
Heat oil, add in onion, cook until brown and add garlic and ginger. Add the minced meat. Cook the meat till its color changes to brown. Add in spices and add 1 cup water. Cover the sauce pan and leave on low heat till the water evaporates and the mince is cooked. Garnish with julienned ginger, chopped green chillies, red chili flakes and serve with naan or rice.
Biryani:
Ingredients:
Rice ½ kg
Mixed all spice 2 tbsp
Salt 1 tsp
Oil 4 tbsp
Ginger garlic paste 2 tbsp
Chicken 1 kg
Tomatoes sliced 3
Yogurt 1 cup
Red chili powder 2 tbsp
Green coriander paste 1 tbsp
Cumin powder 1 tsp
Coriander powder 1 tsp
Turmeric 1 tsp
Tomatoes blended 3
Potatoes cubed 2
brown onions 2 tbsp
To Garnish:
Green chilies 2
Coriander leaves few
Mint leaves few
Lemon sliced 1
Method:
Cook the earlier soaked rice in water and mixed all spices. Heat oil, add ginger garlic paste, cumin, chicken, spices, yogurt, salt, red chili powder, green coriander paste, cumin powder, tomato paste, turmeric and cook, then add potatoes and simmer. Once chicken is done, layer with half rice and add lemon slices, Tomato slices, Green chilies, Chopped Ginger, Brown Onions, Crushed green coriander, Mint. Then add remaining boiled rice and yellow food color and simmer for 8-10 minutes
