A sabzi that you can put together in minutes, Pepper Bhindi Fry with some basic kitchen masalas, ladyfingers and onions!
PEPPER BHINDI FRY
Ingredients
400 grams lady fingers (bhindi)
1½ tsps crushed black peppercorns
2 tbsps oil
2-3 green chillies, slit
10-12 madras onions, halved
5-6 curry leaves
Salt to taste
1½ tbsps tamarind pulp
¼ tsp Tata Sampann Chilli Powder
1 tsp coconut oil
Coriander sprig for garnish
Method
1. Discard the head and slit the lady fingers into four vertically.
2. Heat oil in a non-stick wok, add green chillies, madras onions and sauté on high heat for 1-2 minutes.
3. Add curry leaves and mix well. Add lady fingers and mix well.
4. Add salt, toss and cover and cook for 8-10 minutes, sautéing occasionally.
5. Add tamarind pulp and mix well. Add crushed black peppercorns and mix till well combined.
6. Add Tata Sampann Chilli Powder and mix. Add coconut oil, mix and take the pan off the heat.
7. Garnish with coriander sprig and serve hot.
