A modern breakfast dish, Peanut butter toast with fried egg is utterly filling so you don’t feel those morning blues. Easy to make, this doesnt take much time and is perfect as a pre-office snack or a tiffin treat!

PEANUT BUTTER TOAST WITH FRIED EGG

Ingredients

8 tbsps crunchy peanut butter
8 brown bread slices
4 eggs
8-10 cherry tomatoes
1 spring onion bulb
½ tsp olive oil
6-7 rocket leaves
Salt to taste
Crushed black peppercorns to taste
2 tbsps sweet red chilli sauce

Method

1. Halve cherry tomatoes and put in a bowl.
2. Toast the brown bread slices.
3. Slice spring onion bulb and put in the bowl.
4. Heat olive oil in a non-stick pan.
5. Roughly tear rocket leaves and place in the bowl.
6. Spread 1 tbsp peanut butter on each toasted bread slice.
7. Break 1 egg in a bowl.
8. Place a fried egg ring in the pan and pour the egg into it. Sprinkle salt and crushed peppercorns on it and cook a sunny side up. Remove the ring mould and switch off the heat. Prepare the remaining fried eggs in the similar way.
9. Add chilli sauce to the salad bowl and toss well.
10. Place buttered bread slices on a serving platter in a pair of two. Put some salad on top of each pair and place one fried egg on each pair.
11. Serve immediately.
