This is an all time favourtie recipe to most of us, make this Mumbai style Pav Bhaji with this super simple recipe!
PAV BHAJI
Ingredients
4 medium potatoes, boiled, peeled and grated
8 pav
1 tablespoon + ½ teaspoon pav bhaji masala
1 tablespoon oil
1 tablespoon butter + as required
2 medium onions, finely chopped
1 tablespoon ginger-garlic paste
2-3 tablespoons Kashmiri red chilli paste
½ cup finely chopped cauliflower
½ cup boiled green peas
1 medium green capsicum, finely chopped
3 medium tomatoes, finely chopped
Salt to taste
2 tablespoons chopped fresh coriander leaves + for garnishing
Lemon wedges for garnishing
Method
1. Heat oil and 1 tablespoon butter in a deep heavy bottom non-stick pan. Add half of onion and sauté till translucent.
2. Add ginger-garlic paste, red chilli paste and 1 tablespoon pav bhaji masala and sauté for 1 minute. Add cauliflower, green peas, capsicum, tomatoes and salt, mix, cover and cook on medium-low heat for 10 minutes.
3. Mash the pav bhaji mixture, add 1 cup water and potatoes, mix, cover and cook for 15 minutes.
4. Halve the pav horizontally.
5. Heat some butter in a non-stick pan. Add ½ teaspoon pav bhaji masala, place the halved buns with cut side down and roast till golden brown and slightly crisp. Leave some butter on the sides.
6. Mash the pav bhaji mixture again. Add remaining pav bhaji masala and coriander leaves, mix well, cover and cook for 1-2 minutes.
7. Place roasted pav on one side of a shallow serving plate. Put remaining chopped onions on the other side and garnish with some coriander leaves.
8. Put pav bhaji in another shallow serving plate, top with some butter and garnish with a lemon wedge and coriander leaves and serve hot with roasted pav.
