NON-VEG BITES

Ingredients

Mushroom
4 button mushrooms, stems removed
2 eggs
Salt to taste
Black pepper powder to taste
1 tbsp olive oil
1 medium onion, chopped
2-3 green chillies, chopped
50 gms processed cheese
Chopped chives for garnish
Salmon
A salmon fillet
1 tsp capers
4-5 jalapenos, sliced
1 gherkin
1 small cocktail onion
Olive oil
Salt to taste
Crushed black peppercorns
1white, toasted, cut into roundel
A tomato slice
A cucumber slice
Cream cheese as required
Dill leaves for garnish
Prawn Momo
100 gms prawns, peeled, deveined and chopped
1 medium onion chopped
2 green chillies chopped
Black pepper powder to taste
Salt to taste
2 tsps soya sauce
Schezwan sauce to serve
Meatball
150 gms chicken mince
1 small onion, chopped
1 tbsp chopped garlic
Salt to taste
Crushed black pepper corns to taste
1 tbsp egg white
A sprig of thyme
Oil for shallow frying
½ cup tomato puree
A pinch of turmeric powder
½ tsp red chilli powder
Salt to taste
Crushed black peppercorns to taste
A sprig of thyme
2-3 bocconcini cheese balls, cut into thin slices
¼ cup boiled macaroni pasta
8-10 basil leaves
Cocktail Samosa
200 gms chicken mince
1 tsp garam masala powder
¼ tsp turmeric powder
½ tsp red chilli powder
Salt to taste
1 tbsp chopped garlic
1 medium onion chopped
1 tbsp ginger garlic green chilli paste
1 egg white
7-8 samosa sheets
Oil for deep frying
Green chutney to serve
Chopped onion for garnish
Chopped fresh coriander for garnish

Method

1. Preheat the oven to 180ºC.
2. In a small bowl, break and add eggs, salt and pepper powder. Mix well. Transfer in a squeezy bottle.
3. Take mushrooms, olive oil, salt, pepper powder in a bowl. Mix well. Set aside.
4. Place the mushrooms upside down on a baking tray. Add onion, green chillies, little egg mixture in the mushrooms.
5. Grate processed cheese and add over the mushrooms.
6. Bake for 6-7 minutes on 180C.
7. Place a baked mushroom on plate. Garnish with chopped chives and serve immediately.
8. Take capers, jalapenos, gherkin and cocktail onion in a bowl. Mash the mixture in a mortar pestle. Add little olive oil, salt, crushed black peppercorns and mix well. Set aside.
9. Place a toasted bread roundel on worktop, add a tomato slice, cucumber slice, pipe out cream cheese. Fold and add a salmon fillet. Add the mashed mixture. Garnish with dill leaves.
10. Take prawns, onion, green chillies, black pepper powder, salt and soya sauce in a bowl. Mix well.
11. Take a medium sized roundel of dough and stuff with the mixture. Apply water on edges and seal to form momos.
12. Heat sufficient water in a steamer with a glass steamer.
13. Add the momos and steam for 7-8 minutes.
14. Serve hot with schezwan sauce.
15. Take chicken, onion, garlic, salt, crushed black peppercorns and egg white in a bowl. Mix well.
16. Add thyme in mixture and mix well.
17. Heat sufficient oil in a non-stick pan, make small balls of the mixture and add in pan. Shallow fry till golden brown on both the sides.
18. Add tomato puree, turmeric powder and red chilli powder in same pan. Mix well. Cook till oil separates. Add salt, crushed black peppercorns and thyme. Mix well.
19. Add the fried meatballs. Sauté for a minute on medium heat.
20. Take a meatball and add bocconcini cheese slice. Insert toothpick in a macaroni pasta and basil and insert it in the meatball.
21. Take chicken mince, garam masala powder, turmeric powder, red chilli powder, salt, garlic, onion, ginger-garlic-green chilli paste and egg white in a bowl. Mix well.
22. Take a small squared samosa sheet, add mixture, apply water on edges and seal to form a samosa triangle.
23. Heat sufficient oil in a kadai. Add the samosas and deep fry till golden and crisp, stirring occasionally. Drain on an absorbent paper.
24. Serve hot with green chutney, garnished with chopped onion and chopped coriander.
25. Arrange all the non-veg bites in a platter. Serve hot.
