A delicious and healthy soup recipe makes for an interesting evening snack.

MUSHROOM SOUP WITH ALMONDS

Ingredients

400 grams fresh button mushrooms, sliced
30-35 almonds, blanched and peeled
2 tbsps butter
2 small onions, finely chopped
Salt to taste
White pepper powder to taste
5 cups vegetable stock
1 cup milk
Fresh cream for garnish
Blanched almonds slivers for garnish

Method

1. Heat butter in a non-stick pan, add the onion and sauté for 1 minute. Add the mushroom and almonds. Sauté for a minute.
2. Add salt and white pepper powder. Cook on high flame for 4-5 minutes, sautéing occasionally.
3. Add the vegetable stock, stir well. Cook for 2 minutes. Add milk and let it come to a boil.
4. Transfer the mix into a blender and grind it finely.
5. Pour the prepared soup in a serving bowl, drizzle some fresh cream and place the almonds slivers. Serve hot.
