For Pudina Masala Recipe – https://www.chefkunalkapur.com/pudina-masala/
Mint is abundant in summer and some of the best quality comes during summers. So this makes it the best time to dry mint and use it for months.
There are 2 comman ways to dry mint at home. One is natural air dried which can be done under a shade on a sunny day or under a fan in a room.
The other way is to do it in a microwave. In my experiance natural drying gives a stronger flavour in dried mint as compared to the one done in a micowave.
Also the colour of the air dried mint is more even and lighter green where as the other is dark, deeper green to black and sometimes dark brownish.
I recommend to use a microwave to dry herbs when you need them immediately and do not have the time, as sir drying can take anywhere from a day to 2 days(sometimes more). Air drying depends upon how much heat & humidity is in the air. #mint #herbs #seasoning
