MASALA NUTS

Ingredients

½ cup peanuts
½ cup pistachios
½ cup almonds
½ cup cashewnuts
2 cups puffed lotus seeds (makhana)
¼ cup ghee
2 tsps black peppercorns, coarsely crushed
1½ tsps roasted cumin, coarsely crushed
1 tsp red chilli powder
Salt to taste

Method

1. Heat ghee in a non-stick pan. Add peanuts, pistachios, almonds and cashewnuts. Sauté till the nuts are brown. Add makhana and sauté till they are crisp. Switch the heat off and transfer onto a plate.
2. Heat ghee in the same pan, add crushed black peppercorns, cumin and red chilli powder. Add the roasted mixture and mix till well combined. Add salt and take the pan off the heat.
3. Serve as required or store in an airtight container.
